Wine makers Tasting Notes

Elegant nose giving sweet peach and hot summer honeysuckle aromatics, with age these will roll in together giving rich floral notes. Peaches and pear flavours asemble in the front palate, leading to a wine that is full on the back palate that softly disapates giving you the enjoyment of a flavour sensation.

 Cellaring   

This wine can be enjoyed now or will age beautifully giving you a fagrant food wine that can be enjoyed with summer salads or with fish and lightly seasoned Pasta dishes. Cellar for up to 3 to 4 years.

 Viticulture

The fruit was grown by the Ellin family, who are meticulous in producing high quality fruit typical of the variety. They hand thin bunches to give consistent ripening and balance to the crop. The Ellin’s are registered sustainable grape growers, contributing to our clean environment which is so important to both and domestic and export markets.  The Pinot Gris grapes for this wine were delivered to the winery in fantastic condition, leaving me little to do to make this a fine wine from the Wairau Valley floor in Marlborough.

 Vinification

The same yeast strain we used to produce our Sauvignon Blanc, has been used as we want to release the lush flavors and floral notes during the cold fermentation. When  down to 5gms of residual sugar, we stopped the fermentation to retain slight juice sweetness. We then bottled the Pinot Gris capturing the incredible flavors that were developed in the vineyard.
